This is the current rosemary situation at my house:
Yep. That is a lot of rosemary. We planted it a few years back and it has just exploded. I hate to let anything go to waste, so I’ve incorporated rosemary into many dishes. Some of my favorite uses of the herb are lemon rosemary chicken or fish, chopped up with fresh tomatoes, or even in a bath with some coconut oil.
I’ve been meaning to make my own rosemary dressing for a while, and this one turned out great. Rosemary is very pungent, so I enjoyed this dressing over mixed greens with tomatoes to really let the flavor shine. You can also substitute any other fresh herb with this recipe, it is very versatile.
- Rosemary contains substances responsible for stimulating the immune system, increasing circulation, and improving digestion. It is also anti-inflammatory and associated with improving memory.
Makes 4-5 servings
- 1/4 cup fresh rosemary
- 1/4 cup olive oil
- 1/4 cup cane vinegar
- 1 large garlic clove
- 1 tsp honey
- Combine all ingredients in a food processor and blend! Easy!
